Chicken Fricassee With Sausages

The fricassee is used to describe a light stew, which is first sautéed in butter. The mentioned is definitely same applies to Chicken Fricassee. The accompanying sauce can vary, while the recipe that will be used here is with sausages that provide a rich flavor. Now, let’s move forward to the recipe and cooking method.

Ingredients Of Chicken Fricassee:

Serves 4 pax

  • 3 chicken breast fillets, skinned and sliced
  • 50g unsalted (sweet) butter
  • 1 tbsp. vegetable oil
  • 115g sausages, cut into pieces
  • 5 tbsp. dry sherry or white wine
  • 1 medium onion, chopped
  • 40g cup plain (all-purpose) flour
  • 500ml cups chicken stock
  • 10ml/2 tsp lemon juice
  • 60ml/4 tbsp. chopped fresh parsley
  • Salt and ground black pepper

Cooking Method Of Chicken Fricassee:

Season the chicken with pepper. Heat half of the butter and the oil in a large, heavy skillet or a flameproof casserole and brown the chicken and sausage pieces. Transfer to a shallow dish and pour off any excess oil.

Return the skillet to the heat and brown the sediment. Pour in the sherry or wine and stir with a flat wooden spoon to deglaze the pan. Pour the sherry liquid over the chicken and wipe the skillet clean.

Fry the onion in the remaining butter until golden brown, stirring frequently, for 6 to 8 minutes, or until the juices begin to run. Stir in the flour then remove from the heat. Gradually add the chicken stock and stir well until the flour is completely blended in.

Add the reserved chicken and sausages with the sherry juices, return to the heat and stir to thicken. Simmer for 10 to 15 minutes and then add the lemon juice, parsley, and seasoning. Serve the Chicken Fricassee with plain boiled rice, carrots and baby corn (optional).
